Pizza Buns

These Pizza buns are a doorway to happiness. When you succeed in baking these sensational pizza buns at home, the whole family goes whoopee gaga about you. My kids and Pranav thoroughly enjoyed these buns last night for dinner. I had happy souls, who watched t.v. and ate pizza buns and icecream for dinner. You too can make these in your home kitchen. I am sharing the recipe and few dos and donts of baking these buns in a home oven.

There is, pizza sauce and cheese in the tummy of these buns. As you bite into a bun, your teeth go down onto a molten cheesy cushion of heavenly pleasures, next to rich tomatoey goodness. It is the glee of having pizza in a closed compact design.

These buns turns-out quite soft and the pizza stuffing in the centre talks loud. I have used homemade pizza sauce. If you have lazy bones, you can use readymade pizza sauce. Just make sure that the sauce is not watery. As the dough needs to hold the sauce inside. We need out to avoid leak out situations.We need a thick, intense, concentrated pizza sauce because the interior of the bun is plain. The intensity of the sauce will balance the overall flavour in the buns.

Pizza Buns

Here is my recipe for pizza sauce

Ingredients

6 ripped red tomatoes

2 tsp oil

3 cloves garlic, finely chopped

onion, finely chopped

3 tbsp basil leaves, finely chopped

tsp sugar

tsp Kashmiri red chilli powder

salt to taste

tsp oregano

tsp chilli flakes

1 tbsp tomato sauce

tbsp butter

Method

Blanch the tomato.Peel the skin, and blend 3 tomatoes into a smooth puree.Chop other 3 tomatoes discarding the seeds.

Heat oil in a heavy-bottomed pan.Add chopped garlic, chopped onions and saut till they get translucent. Add chopped deseeded tomatoes and cook completely.

Mash in between so that it turns mushy soon. Add prepared tomato puree. Cook till the sauce thickens.Add basil, sugar, chilli powder, oregano, chilli flakes and salt.Cover and simmer the sauce for 2 minutes.

Add tomato sauce and butter and mix well.

For the cheese, pick good quality mozzarella cheese and cut it into cubes.

The real work is in the dough. It is the yeasted bread dough recipe. Kneading of the dough is important, as it provides strength for the structure formation.KitchenAid Artisan Mini 5KSM3311XBHT 3.3-Litre Stand Mixer (Hot Sauce)

Homemade Ladi Pav

Ingredients

Plain Flour / Maida 2 Cups (250 Gms)

Milk 190 ml

Salt 1 Tsp (5 gms)

Butter 4 Tsp / 20 gms

Milk Powder 1 Tbsp / 15 Gms

Instant dry Yeast 2 Tsp / 8 gms

Sugar 1 Tbsp / 15 gms

Maida/Flour for dusting

Oil for greasing

Pizza sauce 1 cup

Few fresh basil leaves

Mozzarella cheese 200 gm

Sesame seeds 2 tsp

Milk 1 tbsp (to brush the buns before baking

Butter 1 tbsp to brush the buns after baking

Method

Add maida, instant dry yeast, salt, sugar and milk powder in the stand mixer with dough kneading hook attachment. Start the machine and gradually add the milk to knead the dough. Keep the machine running and knead for 10 minutes.

Now add the butter (room temperature) and knead more. It will turn from a sticky mass of dough to a dough that is smooth. When the gluten is activated and it is ready, will take more 15 minutes of kneading to reach that stage.

After 15 mins of kneading, transfer this dough to a big bowl, cover and keep aside for 45 mins to one hour.

It will double in volume after one hour, take some maida dust your hands and punch down the dough. Take out and knead for one minute.

Now divide this dough to equal portions. Roll this in a circular motion to make a round shape.

Shaping the pizza buns

Using floured hands, flatten one ball of dough at a time into a 4-inch circle on the floured surface.

Place a teaspoon of pizza sauce and a cub of Mozzarellacheese in the centre of the dough, top with a basil leaf. Fold the dough up over the fillings and pinch to seal.

Place the sealed side down on the buttered baking sheet. Repeat with remaining balls of dough and fillings, placing the rolls about an inch apart on the baking sheet.

Cover the tray lightly with a clean kitchen towel and keep aside for 1 hour. This is the second rise and is an extremely important step.

After an hour you will see that the buns have grown in size, lightly brush some milk on the top of the buns. And sprinkle some sesame seeds.

Bake the buns in a preheated oven at 180 * C for 25-30 minutes or until golden brown.

When done brush some butter on the top and let them cool on a wire rack for some time. ENJOY!
